Here’s a quick and easy recipe that is readily customizable to your tastes! This dish calls to mind eggroll filling, but we’re making it Migraine Miracle friendly by removing the wrapper and tweaking some of the other ingredients. For example, instead of cooking with sesame oil, we are toasting some sesame seeds to fold into the veggies.

We make this with ground pork, but you could certainly use other ground meat like beef or chicken. And while this recipe calls for chopped scrambled eggs to boost the protein and nutrients, we have also enjoyed the mixture served atop a runny fried egg.

We also sometimes change it up by adding fresh ginger and/or lemongrass to tweak the flavors. You could also make this into a beautiful lettuce wrap appetizer by using scallions or lemongrass leaves to tie up the rolls.

To simplify your life, you could use a bagged cole slaw mixture for the cabbage and carrot (sans any dressing or seasoning that may come with it). We like this dish made with a bagged broccoli-carrot slaw mixture, (but we still add the cabbage separately).

Ingredients:

  • 2 tbsp coconut oil
  • 1/2 onion, finely chopped
  • 3 garlic cloves, minced
  • 1/2 cup carrots, julienned
  • 4 c. cabbage shredded
  • 2 lbs ground pork
  • 2 tsp sesame seeds
  • 2.5 tbsp gluten-free tamari
  • 2 eggs scrambled and finely chopped
  • 2 tbsp chopped scallions
  • kosher salt and pepper to taste

Instructions:

  1. Heat the oil in a large pan and add the onion. Cook the onion until softened and add the garlic to the pan and cook for 1-2 more minutes.
  2. Add the ground pork and crumble while it cooks, incorporating the onion-garlic mixture into the meat. Sprinkle the pork mixture generously with salt and pepper while it cooks.
  3. While the meat is cooking, add the sesame seeds to a small, dry pan and heat over high heat until the seeds are lightly browned. You’ll want to agitate the pan so that the seeds don’t burn on one side.
  4. Once the meat is cooked through, add the tamari and mix in.
  5. Add the vegetables and cook over medium-high heat for about 5 minutes. The vegetables don’t need to be cooked through, just softened and heated. Continue to stir to incorporate them well.
  6. Fold in the cooked eggs. (Alternately, you can cook the eggs right in with the meat, but I prefer to cook them separately.)
  7. Before serving, top with the toasted sesame seeds and scallions.
